Pumpkin Risotto

Directions

  1. Add in 3 el boter and 1 chopped onion
  2. Chop the 800g pompoen
  3. Once onion is soft, add the pompoen.
  4. Season with 1 el rozemarijn and cajun spices and red pepper flakes
  5. Once the pompoen softens a bit, stir in 400g risotto rijst
  6. Normal risotto prep from here, with 1L stock and droog, wit wijn
  7. Top with pompoenzaden and maybe a sprig of bascilicum for colour.
