Black bean Soup
Ingredients
Directions
- Heat oil, add onions, celery, spice with cajun spices
- Cook until vegetables are soft
- Add garlic, cumin, any extra spices, cook 30 seconds
- Add beans, broth, bring to simmer, cook until all is tender (30 mins)
- Take half the soup and mash (in blender, or in pan directly)
- Return to pot, stir in koriander/limoensap
You can add/remove broth to ensure desired soupiness at the end. With these directions, very thick, just slightly runny refried beans.
Description
Several options for topings:
- Sour cream / creme fraiche
- Avocado chunks
- Tomato chunks
Serve with tortilla chips or just a spoon
