Black bean Soup

Ingredients

Directions

  1. Heat oil, add onions, celery, spice with cajun spices
  2. Cook until vegetables are soft
  3. Add garlic, cumin, any extra spices, cook 30 seconds
  4. Add beans, broth, bring to simmer, cook until all is tender (30 mins)
  5. Take half the soup and mash (in blender, or in pan directly)
  6. Return to pot, stir in koriander/limoensap

You can add/remove broth to ensure desired soupiness at the end. With these directions, very thick, just slightly runny refried beans.


Description

Several options for topings:

  • Sour cream / creme fraiche
  • Avocado chunks
  • Tomato chunks

Serve with tortilla chips or just a spoon
