  1. Cook the rice and let cool off
  2. Chop the apple, celery, spring onions, and parsley
  3. Toast the pecans in the oven for a couple of minutes
  4. Toast the seeds in the oven for a few minutes
  5. Dressing: whisk together zest, orange juice, oil, vinegar, honey, mustard, pepper, and salt
  6. Add cooled rice, pecans, cranberries, pumpkin seeds, parsley, celery, apple, and spring onion
