- Cook the rice and let cool off
- Chop the apple, celery, spring onions, and parsley
- Toast the pecans in the oven for a couple of minutes
- Toast the seeds in the oven for a few minutes
- Dressing: whisk together zest, orange juice, oil, vinegar, honey, mustard, pepper, and salt
- Add cooled rice, pecans, cranberries, pumpkin seeds, parsley, celery, apple, and spring onion
