  1. Prepare the rice and/or nan to instructions
  2. Cut the onions, halloumi, garlic, red pepper and ginger
  3. Heat some oil in a pan, and fry the onions
  4. Add garlic, ginger and chili
  5. Add spices and simmer for a few minutes
  6. Add tomato puree, chopped tomatoes
  7. Add the cinnamon stick, cardemom pods and creme fraiche and let simmer
  8. In a separate pan, fry the halloumi in oil until golden brown, and add to the sauce
  9. In a dry pan, roast the shaved almonds. Add half to the sauce, save other half for garnish
  10. Serve with rice/nan and garnish with coriander and shaved almonds
