Aubergines uit de oven

Prep
- Preheat the oven at 200C/400F.
- Slice the aubergines in half lengthwise. Make sure to leave the stems on.
- Score the flesh of the aubergines with deep diagonal slices. Put the aubergine halves face-up on an oven dish.
- Cut the red chili into thin slices and distribute onto the halved aubergines.
- Brush the top of the aubergines with oil and sprinkle with the thyme, and some salt and peper to taste.
- Bake for 30-40 minutes.
- While the aubergines are baking, roast the almond slices in a pan without any oil or butter until golden.
- Mince the garlic and stir it into the Greek yoghurt.
- Blend the mint leaves and 1-2 tablespoons of oil into a puree.
- When the Aubergines are done, take them out of the oven and spoon on the garlicky yoghurt. Drizzle with the mintoil and sprinkle with the roasted almond slices.
- Eet smakelijk!

- Make sure to have some of the leftover garlic-yoghurt, mintoil and almond slices on the side because you’re going to want more!
